This is a hearty cheesy jalapeño meatloaf made with ground beef, Panko bread crumbs, egg, and various seasonings, stuffed with cheese and jalapeños, and smoked for a rich flavor.
Mix all ingredients (ground beef, Panko bread crumbs, egg, salt, pepper, granulated garlic, minced onion, and black beans) well.
Take 1/2 to 2/3 of the meat mixture and form a bowl.
Inside the bowl, add diced jalapeño, thick slice of cheddar cheese, and chili.
Add another slice of cheese and top with more jalapeños.
Take the rest of the meatloaf mixture and cover the top well, ensuring there are no open areas.
Place on the smoker set at 275-300°F and smoke for 1 1/2 hours.
Top the meatloaf with chili and shredded cheddar cheese mixture and smoke for another 20-30 minutes or until the cheese is melted.
