This monster cheese stuffed meatloaf is a delicious combination of ground beef, vegetables, and cheese, smoked to perfection. The internal cheese adds a delightful surprise, and it's topped with BBQ sauce for an extra kick.
Put onion, red pepper, and garlic in a pan, add 2 tablespoons of olive oil, and sauté until veggies are soft. Set aside and let cool.
Add all other ingredients to the ground beef. Then add the pepper and onion. Mix well, preferably using a mixer.
Take over half of the meatloaf mixture and form a bowl. Place cheese inside the bowl, then use the rest of the meatloaf to top it off.
Make sure to seal up the meatloaf well by pinching the sides together and smoothing out.
Place in your smoker for 1.5 to 2 hours or until the internal temperature reaches 160°F at 250-300 degrees.
Add BBQ sauce for the last half hour of the cook and top with cheese long enough to melt.
 Let cool, then serve.
